From Our Table to Yours

This is fresh off the cutting board this week-

Zucchini and sweet onions…

But part of the problem for me with my bounty-

Is to know what else I can do with it!

Yes, fried zucchini is delish- and so are bloomin onions-

But there has to be some healthier options.

Here’s one of them, that I happen I love-and made last night-

Of course, it had a Mexican flare-

(If you know me- tacos are a main staple in my home.)

This is just a lower carb twist.

Sauté, but not to mush- your zucchini and onions- I used chipotle garlic seasoning-

Then add some browned lean ground beef and taco seasoning-

You can add cheese to the top and pop it in the oven at this point-

But I was hungry and just scooped it up with tortilla chips- I guess that negated that whole low carb thing 🧐

Anyway- it’s delicious!

So, grab your fresh zucchini, sweet onions, and cilantro for this treat-

Along with some beets and carrots for a different day in our bag deal….
